Lemon Ricotta Cookies

Little pillows of citrus heaven, that's how I would describe these cookies. One batch makes about 3 dozen and if I don't put them up immediately, my kids will eat them all in a day! When I photographed these, they ate through all but 6 in one afternoon. That's what I get for leaving them on the counter.

They're not super heavy and dense like you'd expect, but they're not super light and airy either. They fit perfectly somewhere in between. They're more cakey and not crispy. The lemon isn't overwhelming, but the icing is bright and in your face, but not obnoxiously so. They're legitimately the perfect cookie.



I make these every year as one of the many Christmas cookies I bake. I make double and triple batches of 5 to 6 different kinds, scoop or roll them and freeze them. I was a bit afraid of how well these little gems would freeze, since they had cheese in them, but I was very happy to learn they freeze just fine. I make them, flatten them, place them on a cookie sheet in the freezer for about an hour, then load them up by the dozen in freezer bags. When I'm ready to cook them, I place them on parchment lined cookie sheets, let them thaw and cook them like normal.


Even though I make these at Christmas, they're the perfect cookie for spring or summer. A dessert for a picnic, or cookout. They would also make wonderful teacher's gifts as well! Maybe I should get on that to go with the Starbucks gift cards I bought the boys teachers. They'd be amazing dipped in tea. Actually these would be absolutely perfect for an actual tea party. I could come up with so many reasons to justify making these cookies! 



Lemon Ricotta Cookies
makes about 3 dozen


  • 1 lemon
  • 4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¾ cup sugar
  • 1 cup butter, at room temperature
  • 15 oz ricotta cheese
  • 2 large eggs
  • 1 teaspoon lemon extract
  • 1 ¼ cup powdered sugar

Preheat oven to 350 F and line baking sheet with parchment paper and set aside. Zest, juice lemon and strain, set aside 3 tablespoons of juice for icing. Whisk together flour, baking powder and salt. In another bowl beat, butter, sugar and zest until fluffy. Beat in ricotta, eggs and extract. Beat in flour mixture. Scoop onto parchment and flatten into disks, using the bottom of a drinking glass, dipped in flour. Leave 1 ½ inch space between each cookie. Bake 15-20 minutes and allow to cool. Stir together confection sugar and lemon juice and drizzle over cooled cookies. Allow to set up before serving.

*If you are making dough ahead and freezing, scoop the dough onto a cookie sheet and flatten and place in the freezer on the cookie sheet, allow it to freeze for about an hour then fill a gallon bag and toss back into the freezer. When you bake them, either thaw and follow original bake time in they're still frozen add 3-5 minutes to baking time.

Snapshots (Christmas Edition)

Looking in the windows down town. 


We went to something called the Christmas Nights of Lights with my in-laws. You drive through the lights and tune your radio to a certain station and the lights flask in time with the music. It was so much fun. Afterwards, there is Santa, bouncy houses and food. I wish I had carried my camera in, but I left it in the car. I think we have a new family tradition!


We went to Rock City with my parents. On it's own, during the day, Rock City is lovely, but covered in lights at night, it is breathtaking. I have so many more pictures that I still need to go through from that night.

We wore coordinated pjs again this year. Instead of a color theme, I decided to pick something all my boys could love and went with a DC comic super hero theme. Caleb and Liam wore Batman, Lee wore the Flash and I wore Wonder Woman.  

Santa has his own plate and glass this year! Thanks Aunt Karen!  (She always finds the best stuff!)
Santa is so polite, he took the time to leave the boys a thank you note.

Gift Guide the foodie in your life

   I decided to make you a list of all the fun things that I love in my kitchen. Many of them are basic staples that anyone who loves to cook would love to get, even if they already have one. You can never have to many tongs or whisks. Others are directed at a certain type of person, like the vanilla beans or matcha powder, but are the perfect gift for bakers and someone with adventurous taste. Of course, being the cookbook hoarder I am, I couldn't leave off a few cookbooks that I adore or want myself. Links are listed below and will take you straight to Amazon
Let's start with the gadgets:

Everyone needs a couple of good whisks. These three are my favorites.

You can never have too many kitchen tongs!

I love love love my emersion blender! Soups, sauces, curries, whipped cream, there are so many things this little baby can do.

Anyone who make the habit of baking cakes or cupcakes needs a set of offset spatulas.
Set of 3 - Baker Icing Spatulas, Cake Decorating Baking Spatulas, 2 Stainless Steel Offset & 1 Straight Blade

A microplane, grates cheese and spices and zests citrus. I don't know how I went so long without one! 

A steamer set is a perfect gift for the cook who likes to experiment in the kitchen or likes to learn techniques from other parts of the world. 

A good dutch oven is a hot commodity in my kitchen, it can go from stove top to oven and back. 

Next up, fun ingredients:

Americolor Gel Paste is my favorite icing and cake batter coloring.

Matcha Powder is my go to smoothie additive, but I also love it in chia pudding, cakes, panna cotta and I even drink it like it's intended from time to time.

I have a hard time finding vanilla beans in my local stores so I order them in bulk. This would make a great unexpected gift for your favorite baker.

Another avid baker turned me onto vanilla paste a while ago and I haven't looked back. While a love fresh vanilla beans, the shelf life on this is longer, the price is lower and there is much less hassle. I still use extract in some things but this is my go to for full powerful vanilla lusciousness when fresh beans just won't work or aren't on hand.

Christmas Bucket List

  Are you ready for the Christmas season? I am. I've been doing my best to hold it in for a month now. I love this time of year. I love the magic and the wonder that is in my kids' faces, I love spending time with my family, immediate and extended. I love the food. The only thing that I don't love is how stressful and hectic trying to plan everything can be. My husband works in retail management and that means a ton of long hours for him and things we have to skip or not attend. Because of his busy work schedule, these days we have learned to plan ahead, make a list of the things we want to do and parties we can try to attend. I love making a list like this and keeping the magic alive for my kids.
